It's time for comfort food, so I made a hearty chicken pot pie using frozen pie crusts and without peas. It only took me 10 minutes to prep and it was delicious.
If I can make it, so can you. Here's the recipe.
My mom was amazing cook.
I know a lot of kids say that, but truly.
The woman had a gift.
Everything she made was fantastic and I have to say, that's one of the things I miss most about our time together.
Sitting across the table from one another, sharing our day, devouring one of her delicious meals...
Now, while I may not have her talent for cooking, I do have her recipe book and I use it often.
Unfortunately, one of the recipes she never made was chicken pot pie.
No, for that meal, I had to rely on Swanson's frozen version.
Pot pies for one were a staple in our freezer throughout the 70's and 80's. Anyone else?
Of course, since then, I haven't had a bite, since I try to limit processed foods, but a few weeks ago, when the temps started to drop, I got a craving.
And I decided I was going to make one myself.
However, before I share it with you, I have a few things to disclose.
- First and foremost, like I said, I'm no cook. Decorate your house, show you how to turn thrift store trash into treasure, I'm a your girl. Cooking? Eh...not so much.
- Second, I'm not a purist, and I don't like peas, so if that's your jam and you're looking for a traditional chicken pot pie recipe, this isn't it.
- Third, and probably most important, I cook the way I craft, on the fly and with a dash of this and a pinch of that. I try to be precise, but again, not my strong suit.
With all that said, here's what I did to make a super easy, very delicious, quick chicken pot pie for my family.
Easy Chicken Pot Pie
I made this with frozen pie crusts, but you can make your own if you like. I just can't be bothered. Ingredients:
- 2 frozen pie shells
- 2 tablespoons of butter
- 2-3 cooked chicken breast, cubed - it's a great way to use leftovers
- 2-3 stalks of celery
- 2 large potatoes- nontraditional, but I like a hearty pie, like my chicken soup
- 2-3 shredded or chopped carrots
- Chopped onion to taste
- Salt and pepper to taste
- 3/4 cup - 1 cup of chicken broth (I used a bouillon packet)
- 1/2 cup of milk
- 2-3 tablespoons of flour
Recipe Steps:
Before I began, I preheated my oven to 350 degrees.
I started by melting the butter slowly in a pot on low heat. Then I added my carrots, celery, potatoes and onions.
I left the heat on and the veggies cooking in the butter as I peeled and chopped and added them to the pot. The meat went in last.
By then, everything was warm and a little soft, so it was time to add the water and packet of chicken bouillon.
As the meat and veggies simmered, I added the flour and milk to make the sauce a bit thicker.
When I was happy with the consistency, I removed the pot from the stove and let it cool for a few short minutes, before I added it to the pie crust.
I'd left the frozen shells out on the counter during the prepping process, so they had softened up slightly. That made it easier for them to stick together...top to bottom.
I poked a few holes in the top with a fork, placed my pot pie on a cookie sheet and popped it in the oven for about 40 minutes.
I have a convection oven. If you don't, you may need to adjust your cooking time.
When it came out, I let it cool down for a few minutes, on a rack, before serving.
Since it was my first time making it, I was a little bit nervous at that first bite.
However, my husband, who isn't generally a fan of stews, meat pies or soups, thought it was delicious and has requested that it be added to the weekly menu.
And it only took me about 10 minutes to prep.

I can't say that I learned the crust trick from my mom though, she made all her crusts from scratch! I do this with fruit pies, too. Blueberry comes out great using two bottoms...and only 5 minutes to prep! Thanks for the visit!!

When I had my own family I made pot pie with four ingredients: pie crust, cream of soup, shredded cooked chicken, and a bag of frozen veggies. The Barefoot Contessa I am not. I never made my own before but it sounds like you're a pro. I think a pot pie Thanksgiving sounds delightful! Great idea.
