Chicken crusted pizza recipes are very popular right now.
There are ones with ground, canned and shredded chicken, but here's the simplest one for people who don't love to cook, but love pizza.
And a tasty way to use your leftover chicken.
Oh sure, I do it and the food is good, I just don't enjoy the process.
I'd much rather spend my time thrifting, decorating, upcycling or crafting.
But like the saying goes, we gotta eat.
However.
I cook the way I DIY.
I'm not really a process girl. I'm all about the product.
Whether I'm sharing a recipe or my latest upcycle, I guarantee, it'll be quick and easy.
My signature style.
So today I'm going to share another recipe for something that sounds fancy, but is super simple to make.
It's a Chicken Crusted Pizza.
And I live in land of pizza. I live in New York.
We know pizza around here and we eat a lot of it. Cheese pies, white pies, margherita pies, grandma pies, pies with ziti, anchovies, veggies, salad, cold cheese and chicken all tossed on top.
Never on the bottom. At least not that'd I'd ever seen.
The first time I'd heard of it was on TikTok. Then I started seeing recipes for it all over the internet, but I paid it no mind. Until.
Until, I saw a reel of someone boasting about it, while I was staring at my leftover chicken breast wondering what I was going to do with it.
It suddenly looked very interesting. And appetizing.
We eat a lot of chicken around here:
Of course, as I said, we're talking lazy girl cooking over here, so I looked at a few recipes to see how they made that chicken crust, gathered what I had on hand and then I winged it.
All in all, I think I did ok.
Simple Chicken Crust Pizza Recipe
Ok, so like I said before, pizza can be topped with anything you like. I'm a rather boring eater. I like bland and basic food.However, if you like hot peppers or pineapples on your pizza, have at it. You can adjust your ingredients accordingly.
You can also make your pie larger than mine. I made a tiny pizza, because I was using leftovers and that's all I had.
Besides, it was a new to me recipe and if it was icky, I didn't want to waste a lot of chicken. It's not cheap these days.
Turns out, it was delicious. I should've made a bigger pizza.
Ingredients:
Here's what I used to make the crust and the toppings.For the crust:
- Cooked chicken breast, shredded - Great way to use leftover chicken
- 1-2 eggs, depending on the size of your pie
- 1/2 Cup of Shredded Mozzarella - I alway shred my own (with this and here's why)
- 1/2 tsp Oregano
For the pizza topping:
- Tomato Sauce (This is how I make mine)
- 1 Cup Shredded Mozzarella
- One Tomato, sliced thin
To make the crust place the shredded chicken breast, the eggs and the mozzarella cheese together in a bowl.
Add the oregano.
Shape it into a ball and then flatten it out on a baking sheet covered with parchment paper.
Then bake it for about 20 minutes on 400 degrees.
When the timer goes off, remove it from the oven and layer on the sauce, the cheese, the tomatoes and any other toppings you desire.
That's it.
I have to say it was very good.
I sliced it up with a pizza cutter and picked it up with my hands.
Just like a real slice of pizza.

DeleteI am going to try this, Kim! I am not a big pizza fan. I never had it until I was maybe 15 or 16 years old and the way my mother made it certainly didn't give me a taste for it. This area is all about pizza, too, and the midwest has their own take on it. That being said, I went through a phase when my kids were little when I only wanted Domino's extra cheese pizza-nothing else on it....lol

DeleteOH my gosh does this look yummy. I am like you I do not like fancy or heavy spiced things. I like boring too. Let the natural flavors of the sauce and cheese do the trick. DeleteI never heard of this but I'm sure going to give it a try! I make my shredded chicken breast in the pressure cooker and it is done in no time... I shred it with a hand mixer. I make it every week! This is a new way to use it and can't wait to try! :)

DeleteKim, I remember seeing this all over Instagram. I've have not tried this yet. It sounds good and I like that you can put whatever toppings you like. I have had cauliflower crusted pizza that is very good. I love all of these low carb options to make pizza.

There are so many different styles and types of pizza in this area, it is not funny....And a huge variety of Mom and Pop places ...more so than the national chains who still survive quite nicely in the midst of the local ones....

So funny, Deb! I’ve never been to NEPA, but it certainly sounds like there’s a lot of pizza places. Here in NY the big chains barely exist. It’s all mom and pops, tons of them, serving classic, big New York style pizza pies. I have to admit, I’m kind of a pizza snob, so when I heard chicken crusted pizza, I was like, what is this nonsense? But honestly, it’s really, really good. And if I do ever get to NEPA I’ll be sure to check out the pizza. It sounds like I won’t have a hard time trying to find a place to eat!!
