Lemongrass Coconut Curry Chicken Salad

Lately, I've been doing a little bit of updating around the house. Freshening up spaces to breathe a little bit of life into them.

Most of them truly need a fix after decades of use.

But some of the changes are purely for my amusement.

Curry Chicken Salad

I crave a new look. A new view. A new routine.

And frankly, sometimes I feel that way about my home online, as well.

I've been blogging for over eight years now and besides the visual update, I made here last year, my patterns have been pretty rote.

I've focused mainly on my home. My crafts, DIYs and decor.

Occasionally, I toss in a story and even more randomly there's a fashion or food post.

However.

As the days tick by, things change.

My interests change.

My skills morphe and grow.

Lately, we're cooking more and, believe it or not, I'm beginning to enjoy it a teeny, tiny bit.

I'm also playing with fashion. Repurposing, redesigning and upcycling pieces.

It's not really a stretch, I mean in college I was supposed to go to FIT for fashion design before I changed majors.

And when the kids were small, I was the costume mistress for a local theater group. Returning to my roots, I suppose.

And frankly, your interests have changed a bit, as well.

For example, in the early years, everyone just oohed and ahhed when I shared. They left nice comments and then moved on.

Today, I get comments and contact forms requests, direct messages and email responses to my newsletter. There are still a number of lovely oohs and ahhs, just like in the old days, but then there are the others.

The others who are looking for answers.

They want more details about the DIYs, measurements or procedure, since they're actually trying to replicate my project.

Those are my favorite type of correspondence. I'm always completely flattered and blown away that I've inspired another DIYer. Big smiles over here for sure.

Then I get other messages from people wanting to know where I found a particular item or if I could recommend something similar.

The two way conversation is glorious. I adore it.

The combination of the two started my wheels turning and I thought maybe, just maybe, I could start sharing a little more of those topics.

Food, fashion and maybe occasionally, a few fun finds - like these. And I'd do it on Fridays, well, because it just sounds best on that day. Alliteration and all.

So today, I'm going to kick it off with a quick recipe that comes to us via my husband. The guy is multi-talented.

In between his painting and gardening and wallpaper hanging, occasionally he eats. Have you tried his pulled pork?

This is another one of his favorites and it's, of course, super easy.

Let's face it, that's one thing around here that will never change!

Lemongrass Coconut Curry Chicken Salad


As usual, this is really more of a guideline than a true recipe. You can add seasonings to taste and even substitute the lemongrass curry for a different variety.

Whatever floats your culinary boat.

Ingredients:


We found this blend at HomeGoods. I searched online but couldn't find anything similar. However, you can get the spices separately. 

Coconut curry
Lemongrass spice
Cooked chicken breast
Spinach 
Tomatoes
Shredded cheddar cheese
Mayonnaise 

There's no magic here. Just rinse and chop up the tomatoes and spinach.

The smaller the pieces the better. Place them in a bowl. Mine is red. Surprised? 

I didn't think so.

Then chop up the chicken and add it to the mix.

Stir in some mayo, some shredded cheddar and your curry spices to taste and you're done.

Mixed Spice Blend

It's a quick chicken salad that's great for any time of the year, but especially summertime.

And it goes without saying that you can enjoy it on any day of the week.

  5. This sounds so good. I never heard of Lemongrass, coconut and curry spices together. Sounds delish. Yay for your hubby. I am going to try this.   13. This chicken salad sounds delicious! I've made chicken salad with regular curry before, but not with the hints of lemongrass and coconut. Wonder how you could replicate that? I'm thinking chopped fresh lemongrass (some supermarkets have it, or if you're lucky enough to have an Indian grocery store near you, they would probably have it) and maybe a little bit of shredded unsweetened coconut flakes.

    1. Thanks Melanie! He found that spice on a shelf and it was a lucky find. I have seen a lot of other recipes with the combination, but I haven't been able to find another premade spice like this one anywhere. I did find lemongrass/ coconut or coconut/ curry but not all three...so looks like you'd have to order some separately as you suggested!! Hope you have a lovely week!

  16. Kim, it is nice that you have continued blogging and have not given it up despite the changes in social media. It is so true that at about ten years things need replacing or refreshing as I am experiencing that with broken appliances. I love clothes too. Reinventing is always an adventure and the format you chose looks and sounds great! I still complete many many projects, but I gave up writing about them, so thank you for leaving a comment, after my abandonment of blogs for so long. I thought my recent post, and only post within a year, might help someone in the desert or someone thinking about chickens in general. Have a great rest of your week!

  18. I had to smile reading this. My hubby is the cook in our house too and he does it waaaaaay better than I ever will :D I'll be sharing this bit of yumminess with him, so next time he makes one of his beer butt chickens we can use the leftovers for a curry infused salad. It sounds divine
